Vegan BBQ Soy Curl Sammies
Vegan BBQ!? This may be one of the best vegan bbq sandwiches you'll ever have... This recipe will teach you how to make home made BBQ sauce packed with flavor, savory soy curls, and creamy coleslaw to make one EPIC sandwich 😋

Ingredients
MARINADE
1 (8-ounce) Package Soy Curls (break them up into pieces)
4 cups Water
1 tbsp (30g) Smoked Paprika
2 tbsp (36g) Soy Sauce (liquid aminos)
BBQ SAUCE
½ small (70g) Yellow Onion, Chopped
2 tbsp (17g) Minced Garlic
2 Cups (480g) Ketchup
2 tbs Maple Syrup
1 tbsp Smoked Paprika
½ tsp Ground Mustard Powder
½ tsp Salt
1 tsp Pepper
1 tbsp Soy Sauce
2 tbsp Apple Cider Vinegar
COLESLAW
2 tbsp Apple Cider Vinegar
1 tbsp Maple Syrup
Quarter Block Silken Tofu
1 tsp Minced Garlic
2 tsp Dijon Mustard
½ tsp Salt
1 tsp Pepper
½ cup Soaked Cashews (in boiling water for 15 minutes)
Red + Yellow Cabbage (4 cups combined)
1 cup Carrots
½ tsp Celery Seed
¼ cup Unsweetened Almond Milk
Squeeze of lemon juice
Directions
MARINADE THE SOY CURLS
Mix together the water, 1tbsp of smoked paprika, and soy sauce/aminos in a big bowl to make the marinade.
Add soy curls and allow to soak for 15 minutes.
MAKE THE BBQ SAUCE
Saute onions & garlic with some water until onions are soft.
Add garlic, onions, ketchup, maple syrup, smoked paprika, mustard powder, salt, pepper, soy sauce, and ACV to a blender or food processor and blend until smooth
COOK THE SOY CURLS
Drain soy curls (no need to squeeze water out of them)
Air Fry for 18 minutes at 380, shaking halfway through.
MAKE THE COLESLAW
Shred carrots, yellow, and red cabbage (about 4 cups combined)
Place all slaw ingredients minus carrots and cabbage in a blender. Blend until smooth
In a mixing bowl, toss cabbage and carrots in dressing
Take Soy curls out and cover them in the sauce. Serve on a bun with coleslaw and pickles.
