Grandma's Blueberry Vegan Protein Pancake Recipe
Level up your breakfast with these high-protein vegan pancakes! This recipe can be made in a skillet or an air fryer! Loaded with blueberries, they will give you a boost of antioxidants. Plus, they are Grandma-approved, so you know they're good!

Ingredients
Pancake Ingredients
- ½ cup whole wheat flour
- ¼ cup vital wheat gluten
- ¼ cup oats
- ½ cup protein powder (75g)
- 2 tbsp Stevia
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup unsweetened plant milk
- 2 tsp apple cider vinegar
Topping Ingredients
- 100g frozen blueberries
- ½ cup plant milk
- 5 tbs (40g) protein powder
Directions
- Combine dry ingredients in a bowl and then blend. You can batch cook the dry ingredients and store them for easy meal prep.
- Add to wet ingredients and mix together.
- Will become a thick cookie dough-like texture.
- Form into 7 balls, 70g each (weight may vary by ingredients brands used)
- Flatten to cookie-like shapes ~ 3” in diameter
Cook in Frying Pan
- Place in oil sprayed frying pan
- Cook on each side ~3 minutes or until golden brown.
Cook in Air Fryer (more cookie-like)
- Air-fry at 350F for 9 minutes or until golden brown.
For the Topping
- Combine blueberries with plant milk in a bowl
- Microwave for 1.5 minutes
- Add in protein powder and stir well
