Breakfast: tofu scramble w/ toast
Directions
Chop up half an onion and add it to a pan over medium-high heat.
Dice one red bell pepper and add to the pan with the onion. Season with salt and pepper, sautéing for 3-5 minutes until softened.
Crumble 2 blocks of extra-firm tofu into the pan, aiming for a scrambled texture.
Season with 2 tablespoons (16g) of nutritional yeast, 2 teaspoons (7g) garlic powder, 2 teaspoons (6.3g) turmeric, ½ teaspoon (1.2g) black pepper, 1 teaspoon (2.3g) paprika, and 1 teaspoon (7g) iodized salt. Stir until the tofu is uniformly seasoned.
Continue to cook until any remaining moisture evaporates and the tofu is thoroughly cooked.
Distribute the tofu scramble among 4 meal prep containers. When ready to serve, reheat and enjoy over 2 slices of whole-grain toast. Garnish with fresh green onions and accompany with a clementine on the side.
