chia seed pudding

Directions

  1. Gather your ingredients and a blender. Into the blender, add 2 cups (290g) of blackberries, 1 tablespoon plus 1 teaspoon (26g) of maple syrup, 1 teaspoon of vanilla extract for a hint of aromatic flavor, 2 cups (480mL) of vanilla soy milk, and ½ cup (80g) of chia seeds.

  2. Blend all the ingredients together until you achieve a smooth consistency. Make sure the chia seeds are thoroughly ground up and mixed in to ensure they'll properly thicken the pudding.

  3. Once blended, evenly distribute the mixture into 4 jars or containers. This is your pudding base.

  4. Place the jars or containers in the refrigerator. Allow the mixture to sit and thicken for at least a few hours or overnight. The chia seeds will absorb the moisture and transform the blend into a pudding-like texture.

  5. When you're ready to enjoy your Blackberry Chia Pudding, feel free to garnish each serving with a few extra blackberries on top for added freshness and flavor.

NUTRITION HIGHLIGHT

Chia seeds are a great source of plant-based Omega-3 fatty acids. Studies have long shown how Omega-3s are important for brain function and inflammation, but they may also have a positive impact on symptoms of menopause like mood and hot flashes.
