Lunch: Buffalo Seitan Wraps with Cheesy Broccoli
Directions
Take 2 packages of seitan (456 g) and break them into smaller pieces. Place the seitan in an air fryer and cook at 375 degrees for 10 to 12 minutes until crispy.
While the seitan is cooking, slice 2 red bell peppers and chop 2 heads of broccoli. Sauté these vegetables in a non-stick pan over medium heat without adding any oil.
Once the seitan is cooked, place it in a bowl with a lid. Add ½ cup (120 g) of buffalo sauce to the bowl. Secure the lid and shake the bowl to evenly coat the seitan with the sauce.
Assemble the wraps by laying out 8 low carb wraps. Spread 1 tablespoon (24 g) of Kite Hill French onion yogurt dip on each wrap. Add 1 tablespoon (30 g) of sauerkraut to each wrap. Place ½ cup (30 g) of spinach onto each wrap. Distribute about 15 g of matchstick carrots onto each wrap. Add cooked peppers, about 30 g per wrap. Finally, place 57 g of the seasoned seitan onto each wrap.
Roll up each wrap tightly and slice it in half. Each serving consists of 2 wraps.
For a side, allocate 97 g of the sautéed broccoli into containers. Top each portion with 1 tablespoon (8 g) of nutritional yeast.
