Directions

  1. Start by adding 2 cups (400g) of pre-cooked brown rice to the microwave and heat for 3 minutes.

  2. While the rice is in the microwave, dice ½ red onion (55g).

  3. Heat a large pan over medium heat with a splash of water and add the diced onion with 1 tablespoon (15g) of minced garlic. Cook for one to two minutes.

  4. While that cooks, pull apart 16 oz (456g) of seitan with your fingers, and add to the pan and cook for a few minutes.

  5. Add in a 16 oz (435g) bag of frozen peas, corn, and carrots and a 12 oz bag or 4 cups (550g) of frozen broccoli. Cover and cook for about 5 minutes.

  6. While that cooks, let’s make the sauce. Grab a small bowl and add ¼ cup (64g) of low-sodium soy sauce, 2 tablespoons of rice vinegar (15g), and 1½ teaspoons each of garlic powder (5g), ginger powder (3g), and cumin (3g). Mix to combine.

  7. Then add the cooked seitan and rice to the pan along with the sauce and 5 cups (142g) of spinach. Mix to combine until the spinach is wilted.

  8. Divide evenly between your containers and top each with ½ teaspoon (5g) of sesame seeds and 4 tablespoons (4g) of fresh cilantro to taste.
