Snack: Almond Butter Energy Bites

Directions

  1. Start by gathering 1 cup (96g) of rolled oats, ½ cup (125g) of almond butter, ¼ cup (40g) of hemp seeds, 3 tablespoons (60g) of maple syrup, 3 tablespoons (45g) of vegan chocolate chips, and 1 pinch of salt to a mixing bowl.

  2. Using a large spoon, fold all the ingredients together. Mix them until they are well combined and the texture resembles that of cookie dough.

  3. Once your mixture is ready, scoop out a heaping tablespoon of it. With your hands, gently roll the scooped mixture into a ball. Continue this process until all of the mixture is used. Aim to make about 12 energy bites.

  4. Place each energy bite in a shallow container, ensuring there is some space between each one to prevent them from sticking together.

  5. If you want to enjoy the energy bites immediately, chill them in the freezer for 1 hour to firm up. Alternatively, if you're not in a rush, you can simply store them in the refrigerator.

  6. When it's time to eat, a single serving consists of 3 energy bites. You can choose to enjoy all three at once or spread them out throughout the day, according to your preference.
