TACO LOADED SWEET POTATO

Directions

  1. Start by washing a medium-sized sweet potato and pierce it a few times with a fork to allow steam to escape. Place it on a microwave-safe dish and cover it with a cover or a paper towel. Microwave the sweet potato for 12 minutes to begin cooking.

  2. While the sweet potato is in the microwave, chop up ¼ (50 g) of onion. Add the chopped onion and ½ tsp. (2.5 g) of minced garlic to a nonstick pan over medium heat.

  3. As the onion and garlic start to cook, chop 4 oz. (113 g) of seitan as our main protein source. Add the seitan to the pan with 1 tsp. (3 g) of low-sodium taco seasoning. Add a splash of water as needed to prevent sticking.

  4. Stir the onion, garlic, seitan, and taco seasoning until fully combined and heated through.

  5. Test the sweet potato for doneness. You may need to rotate it and microwave for an additional 1-3 minutes until it is soft.

  6. Once the sweet potato is cooked, place it on a plate and slice it lengthwise to create a pocket for the stuffing. Spoon the onion-garlic-seitan mixture into the sweet potato.

  7. Top with ½ cup (18 g) of chopped lettuce and ¼ cup (45 g) of chopped tomatoes. Add 2 Tbsp. (30 g) each of guacamole and salsa. Finish with a squeeze of lime juice and fresh cilantro.
