Tofu eggless Salad Wraps
Directions
Start by grabbing a mixing bowl and about ½ block of extra firm tofu (210 g). Using your hands, crumble the tofu into the bowl.
Dice 2 stalks of celery (80 g) and ½ a red onion (55 g). Add both to the bowl with the crumbled tofu.
Stir in 2 tablespoons (28 g) of vegan mayo, 2 tablespoons (16 g) of nutritional yeast, 2 teaspoons (10 g) of Dijon mustard, 2 teaspoons (10 g) of lemon juice, ½ teaspoon (2 g) of turmeric, ¼ teaspoon (1 g) of black pepper, and ¼ teaspoon (1.5 g) of iodized salt. Mix all the ingredients until well combined.
Place 3 large lettuce leaves onto a flat surface. Spoon an equal portion of the tofu mixture onto each lettuce leaf.
Cut 4 slices of tomato and then dice them up. Divide evenly between the three lettuce wraps.
Serve the lettuce wraps immediately, enjoying the blend of creamy tofu and fresh, crunchy vegetables.
