TOFU FRIED RICE
Directions
Add 1 package of cooked brown rice (101g) to the microwave and heat according to package directions.
Crumble ½ block (227g) of super firm tofu into a pan over high heat.
Add 1 Tbsp. (15g) of minced garlic, 1 Tbsp. (18g) of tamari, and ½ tsp. each of paprika (1g) and cumin (1g). Cook for 3 minutes, stirring occasionally.
Mix 1 Tbsp. (18g) of tamari, 1 Tbsp. (15g) of rice vinegar, and 1 tsp. (7g) of maple syrup in a small bowl until well combined.
Add 1 cup (182g) of frozen mixed vegetables to the pan with the tofu and cook for another 2½ minutes.
Toss in ½ cup (101g) of the cooked brown rice along with the prepared sauce. Mix until evenly combined. Serve by plating and topping with fresh cilantro and green onion. Enjoy!
